Flowers and food
There are more flowers on their way, many many that are still just babies - how exciting! The lonely flower died now and a new one replaced it, seems like they only survive a day or two and then die.
Yesterday was one of my days off from French, but it almost seemed like i was even more busy!
About the honey jalapeno chicken, we had it yesterday and it was really good - and even if you followed the recipe each person could choose how spicy they wanted it. I made an avacoado yogurt sauce with it - avocado, Greek yogurt, onion powder and salt.
Other than that, if you were wondering how my work out is going - good.
I am starting to see a difference, and so is memo.

Garden life and and such things
We enjoyed our tiny, yet awesome garden yesterday.
I am pretty sure i posted a picture of the flower (yes 'the', there is only 1) yesterday.
I have taken the challenging of making this garden awesome, thus i water it and cut the grass.
Lets see how it looks in a few months.

Wait
I am waiting.
I applied to become a Mexican resident two weeks ago and i should have received the answer now.
I would like to know if i need to hand in papers that proves our economy is good enough (although we did that last year).
We will see. Other than that i might be organizing a jibs alumni event soon, i was thinking a Sunday brunch. Any one would be interested?

We had a wonderful time with my dad and Bettina.
We got two new additions to the family - a king size bed and a table for the living room.
We drank wine, went to Atlas for break fast, to Chapala for some relax time and had some Mariachis over.
Just amazing.

Royal visit
Today my dad gets here for the weekend. I have spent the past day and a half cleaning, and am sure now it is perfect!
Memo is picking them up from get airport around 3, so they should be here at 4 we will have a late lunch - meat, guacamole and rice.
Sophia is sleeping and then we're hitting the fabric store to get some curtains for the guest room .
Yesterday in the afternoon we had a nice outing with Sophias friend, yuliana and her mom, just amazing.

Mind your own business, will you
Oh my...
I bumped into one of the most ignorant, rude and, quite honestly, stupid persons ever on Saturday.
I was sitting with a friends sister who is pregnant. She is in her early 20ies, is excited, her bf is excited, her family supportive and will not havr money issues.
We were taking about how amazing it is to be a mother, how to give birth and breast feeding.
Not only did the girl make it clear how, literary, stupid she was by giving us ridiculous reasons not to breast feed or give natural birth. It was ridiculous.
Worse - she pretty much told us how wrong it is to have a baby without being married. Both of us being unmarried - and happy.
She also had strong opinions on how Memo and I should go out to party more often etc.
Now... everyone is entitled to their own opinion.
But, you could keep it to yourself.
Dont sit and tell a pregnant girl and me that we are living our lives wrong.
Moreover, dont go and tell my friend that I shouldnt give his sister advice unless you have checked what they stand for.
I, for example stand for getting married when time is right - which is not just because i have a baby.
I will get married for love.
I dont judge you, dont judge me. Because as far as i have learnt, the people with the strongest opinions (in this sense) are usually the ones with the darkest secrets.
So if I ever bump into her again - which for her sake I hope we dont - I will let her know what I think about her. And I can be pretty damn nasty when it comes to that.

Food Review
We started off with that coconut-ginger chicken that I told you about. I was super excited, and have to admit I was a tad disappointed. There was something missing.
Need to figure out what to improve the recipe with.
We moved on to Honey Mustard chicken - which in Memo's disappointment didn't mean Honey Mustard but honey + mustard, it was so so... too much Honey in my taste.
The chicken Gyros were divine - marinated all day in a yogurt, garlic and herb mix. Mums. I made my own pita, and even if they didn't blow up to become a balloon they were super tasty, not dry like the ones we bought last week AND they had a pocket, which made eating much easier - i.e. less messy.
The competition between the weeks best is defiantly the Gyros or the next recipe - Cajun chicken pasta.
So as you can see most of it is chicken, we didn't do this on purpose, those were just the recipes we found.
So, Cajun chicken. Fast and super tasty. I chopped up a few veggies we like, fried the chicken + spices, added veggies + more spices, mixed in greek yoghurt and milk, added some goat cheese and well... Memo ate it with pasta, I didn't.
Super good, I changed the original recipe a bit - made it spicier and healthier.
Today I am making Ginger - Cilantro Bass (fish), we will see how that goes, hopefully it is tasty. I want something tasty for a Friday.
I am also making strawberries filled with a cream cheese mix (glass sugar/flor socker, and vanilla), half dipped in dark chocolate for our valentines night.

rush
I am in a constant rush.
Yesterday I was rushing to get myself and the house ready for the French, and the last one didnt leave until almost 8.
I rushed Sophia to bed, rushed through work out so that i would have time to prepare valentines gifts.
Today has also been quite busy, making pita bread from scratch etc.

Sophia's surprise
sophia had quite the surprise for me when she woke up from her 2h nap.
let me put it this way - yesterday she ate an enormous amount of food. nothing came out.
now it did.
not as bad as the time my sister found her in my mom bed crawling around in it... but i have personally never seen that much poop - in my life.
and i live with a man who sometimes forget to flush.

The weekend
We bought a couch yesterday which was pretty huge.
On Saturday we spent most of the day either trying to fix things at home or looking for a couch. We bought a frame and a few other necessities.
Yesterday we spent most of the day by the pool. Aaron and kristin joined, it was her birthday and I wanted to make cupcakes but didn't have the time, so I will do it for Wednesday instead.
I will mak mini Gräddtårtor mums!
Afterwards we went to eat with memos parents, and then to Andares to go get the missing piece for Sophia's night lamp (a transformer) and complain a little about he strollers new wheel that still hasn't come.
Oh well...
Sophia is doing good. Spoiled and emotional, but happy.
Food tips
Some days were a little bit boring, so I will only tell you about the successes.
The hit of the week was spicy honey chicken with lime and cilantro rice. Memo loved it, and so did I. It was amazing. (If you want the recipe, let me know).
I found Greek yoghurt, so I made chicken gyros with goats cheese and tzatziki, I loved everything but the pita bread, it was dry and boring, I will make my own next time.
And on Saturday we made amazing hamburgers.
We ate really good on Friday too, I bought meat, which we had with a goats cheese salad and guacamole, but I didn't rally have to do much.
I am super excited about what we are having today - coconut-ginger chicken.
The chicken is marinating as a I write : coconut milk, fresh ginger, cilantro, chili, coriander seeds and salt.
I will let it marinate for 3 more hours.
We will eat this with rice boiled in chicken stock.
Mums....
I can't wait to eat!

No time
Time is very scarce at the Hurtado-Bjork house.
Today i have been trying to catch up on cleaning. Mopping floors and such amusing chores.
Sophia, the beast, is in her room trying to nap. Not sure how it is going, just heard her talking to herself.
Need to get my ass down stairs, start with lunch and mop the floors.
Doctors appointment yesterday, 76 cm and 10 kg
Not sure how accurate those numbera are thou.
She also had a shot.
We were also recommended a certain brand of milk - i.e. Formula.
All you swedes will be asking - why would you still be giving formula if she is eating well.
My theory about why mexicans give formula as the main source of nutrition is because they dont know how to make food that is equally good.
Only logical explanation.
Sophia eats proper food all her meals, and has done so for many months.
She eats a very varied diet, high on veggies, protein, fruit and of course carbs and fibre.
I would love to give her valling - or even formula - milk before bed time, but the one we found uses honey as sweetener - and i really dont understand why she should get the habit of drinking sweetened milk before sleeping (or anytime for that matter).
So, let me go tell her to nap - i can hear her play

Work and out
Yesterday Fer was over for some French talk and almost straight away after she left Sophia passed out.
Since memo was in school it left me with laundry and a nice work out - finally. Sadly i had to take a cold shower afterwards.
