Vallarta

We are leaving soon to Vallarta. We will be back on Monday.

Swedish Tacos - Again, I know... Memo's request. They finally started selling Sour Cream at Walmart (Galerias) so that was a nice addition.

Spicy Mexican Marinated Chicken - Might be difficult to find 'Chiles en Adobo' in Europe - Google and see for alternatives (smokey and spicy), I also changed the Mayonnaise to Greek Yogurt to make it healthier. Memo LOVED it, I could have it again, but really not my favorite. Served with Lime and Cilantro Rice and avocado.

Swedish Meatballs with Stuvade Macaroner - For those of you who have never had homemade Swedish Meatballs - you HAVE TO try them, amazing. I always serve it with Stuvade Macaroner (on which you put Ketchup) and Swedish mustard (or Honey Mustard) for the Meatballs.

Beer and Brown Sugar Marinated Beef - It was ok, good, not bad, nothing extraordinary either. Something we will try again, unless we find a better marinade.

This week is short - only today Monday, and I made carne molida - köttfärsås - bolgnese sauce, no recipe, just did it.

Tomorrow we are going to Vallarta for the week, will be back on Monday next week.

As always, too fast

The weekend passes too fast as always.
Compared to previous weekend we really didnt do much.

Saturday we spent the whole day at the house, a few of Memos friends came over for pizza and beer, it was fun and relaxed and no need to pretend to like someone!

Yesterday we rested and went to Andares just to chill and eat.

7 - 12

Between 7.30 and 12 we were out today...
We went to the well known, infamous Palacio Federal.

I went because it said on the website that my request for the residence permit had been classified - que!? Yes, nothing else.
Somehow Memo found out that we needed to bring his IFE and that was it.
Sadly it will take a while for them to make the permit so I had to get an Exit/entry permit in order to travel to Panama. I will pick it up April 1st.

All should be done for the trip now. I just need to call COPA Airlines and the Airport tomorrow to triple check that we do not need any notarized paper saying I can travel alone with Sophia.

I am tired, I will rest now.

Negativity

Quite the negative post I put up earlier - Sorry about that!
We've just been dealing with a lot of stressful things lately - getting all the documents needed for the trip ready - Sophia's Passport (check, we will pick it up on the 3d), my Residence permit (we're going tomorrow to see what happens next) and maybe that document needed for me to exit Sophia from Mexico (after some googling it seems like it is NOT necessary LINK) - also one of Memo's friends and his GF seem to be enjoying going around talking about us (more like me) to people, this pisses me off, not so much what they say because, quite frankly they are idiots, but the fact that they go around and talk about us (me) to others - If you have something to say, say it to my face for God's sake - This friend has talked bad about me since the moment we started to date a few years ago, and I have never liked him, but it still pisses me off (yes, Memo knows).

Running

It's like a race.
I/we are running to get everything done.
Tomorrow we need to go for my residence permit, but i need to take photo first - but when. Memo isn't really known to joyfully do things for others, and does not like me to take a cab
the option is to take 3 times more expensive pictures tomorrow.

We need to get a permit in order for me to be able to leave the country with Sophia without memo - memo doesn't really want to pay so he wants to double check if that really is true.
It does suck to have to pay for it, but it needs to be done.

So in order to get my mind off these things i baked chocolate cupcakes today (recipe later) and made meatballs.

Mums.. Lets hope memo come back from fixing his new phone soon.

Stuvade Macaroner

Stuvade Macaroner

Macaroni
Milk
Flour
Salt
Pepper

You Cook your macaroni as usual. Drain the water and add milk, so that it almost covers the pasta. Start by adding one or two table spoons of flour, put it back on the stove. As it heats up the sauce will thicken, stir the entire time. If not thick enough, add some more flour - little by little.
Salt and pepper to your liking.

This is the super easy way to do it.

Should look like on the image, less runny maybe!


Swedish Meatballs

Swedish Meatballs

500 g        Minced Meat (in Sweden 70/30 beef/pork, I use 100% Beef)
1 DL         Bread Crumbs
1,5 DL      Milk or water
                Salt
                Pepper
2 Tbs        Chopped Onion
1              Egg
                Butter
1l             Beef Broth


Mix the Bread Crumbs and milk, set aside at least 10 min. 

Mix all ingredients together - NOT butter. 
Start rolling small Meatballs, put water on your hands from time to time to make it easier. 

Put butter in pan, wait until it is golden brown and start frying (middle temperature, or low, NOT high) your Meatballs. When almost done (just a few minutes) put in beef broth and let simmer until ready. 

Serve with Stuvade Macaroner, Mashed Potatoes and gravy or Spagetti.

Long weekend

Our weekend in the minimum amount of text,  but more pictures.

Saturday we made Sophias new Mexican passport and had lunch with memos friends. A nice but tiring day.

Sunday memo ran Media marathon de Zapopan. So early morning. Very nicely organized race with a bunch of performances while he was running (it stared and finished in a stadium used in the Panamerican games). He finished at 1.35, his goal was 1.30 so he wasn't too excited.

Yesterday was a free day. Memo was home. We went grocery shopping, had Swedish tacos and cleaned the whole house - i did memo was studying.

This Weeks Food

Lime & Coconut Chicken - Really tasty, although Memo ate all but two tiny pieces.

Monterey Chicken - A repeat from the first week, on Memo's request. A very good dish, a bit heavy for made taste though.

Swedish Tacos - Memo's request.

Teriyaki Beef Noodle Bowl - AMAZING, this one you really do have to make. I did it with spaghetti  because I didn't have noddles. I boiled the Spaghetti in the beef broth, which I later used for the sauce. I added a bit extra of everything to make more sauce. I fried all the veggies in A LOT of butter and garlic. I have just watched the movie Julie & Julia (AMAZING) and was very inspired by Julia Child that day, you know what she said:




Lemon Dill Chicken - Very good and not difficult to make. I served rice boiled in chicken broth on the side.

Food week was nice. I was pretty tired, so cooking wasn't too exciting!

I was supposed to make my favorite chocolate cupcakes today, but I think I will wait until next week.

REST, REST, REST... let this exhaustion finish!

Hmhmh, now you are probably wondering why my sister is packing, and why that affects these clothing items.

WELL, we are all going to PANAMA! Yay, we're going to visit my dad and Bettina; Anna-Karin, Vincent, Victor, Sophia, Maria (sister) and I... How amazing no?

The Europeans of the family will be there from the 1st until the 17th, and Sophia and I will join from the 4th until the 16th.

Que padre no?

Thus, I hope my sister can fit these things in her luggage!
